In this episode of Thai-licious, I travel to Chiang Mai located in Northern Thailand. Chiang Mai is a very popular destination spot because it’s the perfect location for serenity, pleasant weather, peaceful surrounding that makes you never want to leave, and of course, the local dish is something you must explore while traveling to this part of Thailand. Today, Chef Anchalee Luadkham of the Four Seasons Chiang Mai will show us how to make my favorite northern Thai dish – Khao Soi!
We all get something different with visiting the Cooking School that is based in the Four Seasons Resort in Chiang Mai. It is very typical for students and chefs in the Cooking School to go on a market excursion in the city to pick up local ingredients. My guide was very informative and showed us the “secret” parts of the marketplace to get the best ingredients.
I had the opportunity to learn from her on how to prep the ingredients and cook all the elements of the dish. We begin the dish by deep frying the egg noodle and cook it for a little bit, then start with the curry and add a little bit of spice depending on our preference. The dish starts to look very appealing to me when the chicken and coconut milk are being added to the cooking pan. If anyone is a fan of spice you will definitely enjoy this dish.
Chef Anchalee is knowledgeable and she offers suggestions and alternative ingredients in case you don’t have similar preferences as other people. The finished product looks phenomenal. Saying that is not the same when you actually look at the dish and try it out for yourself.
