In this episode of Thai-Licious, we’re taken to one of Thailand’s most prestigious culinary schools based out of the Mandarin Oriental Hotel in Bangkok to learn how to prepare a delicious dessert… the black sticky rice with egg custard.
Chef Narain Kiattiyotcharoen presents the main ingredients, which consists of coconut milk, granulated sugar, salt, black sticky rice, palm sugar and pandan leaves; often times, the pandan leaves are considered Thailand’s vanilla.
This was one of my favorite episodes to film because it was very hands on for me. Chef Narain was a great teacher and let me do most of the cooking — from squeezing, mixing and cutting the custard, I had a lot of fun preparing this dessert. This episode was was an honor as this top chef let me experience creating this dessert.
The Chef is very knowledgable and he offers suggestions and alternative ingredients in case you don’t have the recommendations at home.
And now the best part, the dessert was all brought together in a small, yet beautifully delicate manner inside a small pandan leaf container that was filled with the black sticky rice, topped with a cut out of custard and garnished.
